The project proposes the installation of a collection and processing plant for dehydrated papaya and pineapple in Iberia, Madre de Dios, with the aim of evaluating economic viability. The research is applied in nature, with a quantitative approach and a correlational level. The choice of these fruits is based on their nutritional and therapeutic benefits, in response to the growing demand for healthy snacks, supported by organic certification. The plant will be located in the district of Iberia, which is known for its biodiversity and favorable climate for tropical fruits and will take advantage of the tax incentives provided by Law No. 27037. A survey conducted in Cusco shows a potential demand for dehydrated papaya and pineapple. The per capita consumption of dehydrated fruits in Peru is 0.061 kg/year, while in the U.S. it is 0.46 kg/year. In 2023, Cusco recorded an entry of 28.9% of American tourists, which reinforces the viability of the project. The economic evaluation shows a Net Present Value (NPV) of S/ 183,555.44 and an Internal Rate of Return (IRR) of 39.25% with the benefits of Law No. 27037; without these benefits, the NPV is S/ 74,453.72 and the IRR is 29.38%. The project is profitable in both evaluated scenarios.
